Ingredients / for 10 people
500 g raspberries 1 shortbread dough 3 egg yolks 1/2 l milk 75g caster sugar 50 g flour 25 g butter 1 split vanilla pod (or natural vanilla extract) 1 teaspoon kirsch 25 cl whipping cream icing sugar chantifix (optional you can find it in the supermarket)
1 Darken a pie pan with the dough and bake it white for 10 minutes. During the last 5 minutes, sprinkle icing sugar on the dough so that it caramelizes and does not absorb the pastry cream.
2 Blanch the yolks with the sugar, then pour the flour in several stages and mix. Boil the milk and vanilla and gently mix it with the yolks, sugar and flour without stopping to turn.
3 Place the mixture in a saucepan, add the kirch and cook over low heat for a few moments. Remove from the heat as soon as the first broths, add the butter, stir and set aside.
4 In a sink filled with cold water and ice cubes, place a salad bowl cooled in the fridge. Fill the latter with whipping cream and beat in whipped cream. As it may take some time, use chantifix. Sweeten with icing sugar as desired.
5Gently mix the whipped cream and the pastry cream. Finally Pour the cream over the dough and arrange the raspberries. Sprinkle with icing sugar.
